Sata Souji Shoten is a popular shochu brewery known for the potato shochu “Haruko Amedomi” and “Fujisai.”
Another signature sake is this “Kakudama Umeshu”.
A full-bodied rice shochu distilled under normal pressure and aged for about 3 years.
I marinated the rice in shochu.
Although the sweetness is modest, the minimal filtration process results in an exquisite plum wine with a rich flavor.
